When to call a new restaurant about kitchen equipment: the Washington timeline
Washington restaurants choose kitchen equipment while the permit drawings are in review: about five months before opening.

When the decision happens
The hood, the walk-in, the dish machine and the grease interceptor are drawn into the plans before the permit is filed, and orders go in once it is approved.
Call while the plans are being drawn or reviewed. After the permit is issued you are bidding on a list someone else wrote.
What the owner is dealing with
Long lead times
Hoods, walk-ins and specialty ovens can take weeks to months. A late order pushes the opening while rent is already running.
Health department sign-off
The health plan review checks the equipment list. A swap after approval can mean a revision and another wait.
Gas and power limits
The space has only so much gas and electrical capacity. The owner needs someone who sizes the line to the building before buying.
Questions reps ask
When does a new restaurant buy kitchen equipment? It is drawn into the permit plans and ordered once the permit is approved. In Washington the permit goes in about five months before opening.
Which permits mean a kitchen is being built? A tenant improvement for a restaurant, a type I hood, fire suppression over the cook line or a grease interceptor. Each one shows up in public permit data.
Is the health plan review public? The Snohomish County Health Department posts its food plan reviews, and we read them. In King and Pierce Counties the building permit is the earliest public sign we have.
How we measured this
Measured from 402 Washington restaurant openings, January 2024 to October 2026 (339 King, 42 Pierce, 21 Snohomish): every restaurant in King, Pierce and Snohomish Counties whose city business license gave an open date in that range. Opening day is the open date on the license. For each step we took the first matching public record on the same business in the two years before opening (for the first inspection, the 180 days after) and counted the days between.
A step counts only when the record is tied to the business itself. Permits filed under a bare address are left out, because a hand check found earlier tenants' permits among them. That leaves the permit steps with 4 to 20 openings each, so they carry an asterisk. Three steps only see records since we started reading them (dates below), so their numbers are bounded: the business license can show at most a few months of lead, and the first inspection leaves out recent openings not yet inspected. Measured October 4, 2026. We re-measure as more permits are tied to their businesses.
