When to call a new restaurant about POS: the Washington timeline
Washington restaurants pick a POS during the build-out: about two months before opening.

When the decision happens
The owner chooses a POS while the walls are open, because the terminals, kitchen printers and network drops get wired during the build-out. Your window opens when the building permit is issued and closes at the final inspection.
Call in that stretch and you help plan the counter. Call after the final inspection and you are asking the owner to replace hardware they just bought.
What the owner is dealing with
Hardware has to arrive before soft open
Terminals, printers and kitchen screens take time to ship and set up. An owner who signs late opens on a borrowed tablet.
The wiring follows the system
Station placement and network drops depend on the POS they plan to buy. Switching later means opening walls.
Processing is signed with the POS
Most owners sign card processing with the POS. Once open, switching means a new contract and retraining staff in their busiest months.
Questions reps ask
When should I call a new restaurant about POS? After the building permit is issued and before the final inspection. In Washington that runs from about five months to about two months before opening.
How do I find restaurants still in the build-out? Watch building permits. A tenant improvement for a restaurant, a kitchen hood or a grease interceptor marks a build-out. The Morning Sheet reads those filings daily in King, Pierce and Snohomish Counties and ties each one to the business.
Is the business license too late? Usually. A license filed ahead of opening shows up within about five weeks of opening, and by then the POS is on the counter.
How we measured this
Measured from 402 Washington restaurant openings, January 2024 to October 2026 (339 King, 42 Pierce, 21 Snohomish): every restaurant in King, Pierce and Snohomish Counties whose city business license gave an open date in that range. Opening day is the open date on the license. For each step we took the first matching public record on the same business in the two years before opening (for the first inspection, the 180 days after) and counted the days between.
A step counts only when the record is tied to the business itself. Permits filed under a bare address are left out, because a hand check found earlier tenants' permits among them. That leaves the permit steps with 4 to 20 openings each, so they carry an asterisk. Three steps only see records since we started reading them (dates below), so their numbers are bounded: the business license can show at most a few months of lead, and the first inspection leaves out recent openings not yet inspected. Measured October 4, 2026. We re-measure as more permits are tied to their businesses.
