How we know what's opening
How do we know a restaurant is opening in Seattle before it's announced? Restaurants leave a paper trail months before opening day: building permits for the kitchen build-out, a business license, health inspections, and liquor applications. We read the King County record every week and fuse those filings into one row per business. Every date shown is the date on the filing itself.
When will each of these restaurants open? We publish an opening date only when the business states one itself, on its own site or social pages. For everything else we show how far along the record says it is: a completed build-out or a health inspection usually means weeks out, an early permit usually means months.
How current is this list? It is rebuilt from the King County record every week, and this page was last updated August 25, 2026. Once a spot opens, it moves to the Seattle openings page.
