Signals we're watching

On file so far: City of Seattle building permits (latest July 22, 2026). Nothing newer as of October 15, 2026.

Next in the datasets we check, usually in this order:

An electrical permit for the kitchen equipment and the rest of the build-out.
A business license for the location, usually weeks before opening.
If it will serve beer, wine or cocktails, a liquor license application to the state Liquor and Cannabis Board.
A sign permit. Signs usually come late, once the storefront is close to finished.
A food business permit from Public Health Seattle & King County, issued after the pre-opening inspection. It is usually the last record before first service.

We mark it open only when a public record and a second source, the company itself or local press, both say so. An opening date goes on this page only when Chipotle states one, or a public record dates it. We don't estimate one.
